The Most Amazing Vegan Carrot Soup You’ll Ever Have


We found this bad ass recipe for a carrot soup that is to die for. It’s made with just coconut milk, onions, carrots, garlic, and curry paste. Cook it in the Instant Pot or on the stove, then blend it up. Super smooth and velvety, and bonus: it’s super healthy.

What you need:
8-10 large carrots, peeled and chopped coarsely
1 onion, chopped
3 cloves garlic, peeled
1 14-ounce can coconut milk
1 1/2 cups chicken or veggie broth
1/4 cup peanut butter
1 tbsp red curry paste
salt to taste
